CONGEE- Comfort Food
Congee ( Kanji) கஞ்சி, a word originated from Tamil language, is a food our ancestors have been eating and i grew up eating the same during our school summer vacation at our grandparents home. A Comfort Food, easy for the whole digestive system.
#Congee is usually made by left over rice, soaked in water or buttermilk overnight which gets #fermented. It’s a homemade #probiotic gruel or porridge.
Studies have shown that availability of micronutrients like B complex, vitamin K, calcium, iron, magnesium, potassium and selenium increases drastically in rice after undergoing the process of fermentation. It is a good source of Vitamin B6 and B12 which is otherwise very rare in normal diet.
Congee is a comback as we all are getting more health conscious. A bowl of Congee with stir fried vegetables or peanuts & jaggery, tastes great. Give it a try.
